Two Refreshing Organic Tea Drinks for Summer

Looking for easy, café-style drinks you can make at home? Here are two refreshing recipes featuring organic tea: a Sencha Matcha Mojito (with or without alcohol) and a comforting-yet-bright Vanilla Rooibos Apple Drink. Perfect for summer days and casual gatherings.

1) Mojito with Organic Green Sencha Matcha Tea

A classic mojito twist with a gentle green-tea aroma and a beautiful, natural green hue.

Ingredients

Tea Syrup: 100 g caster sugar, 50ml water, 1 teaspoon Organic Sencha Matcha.

Cocktail: About 20 fresh mint leaves, 4 shots rum* (adjust to taste; for a mocktail, swap rum for sparkling apple cider), 1.5 shots lime juice, 1 shot Sencha Matcha tea syrup, fizzy water, crushed ice.

Method

First, make the tea syrup. In a small saucepan, combine sugar, water and Sencha Matcha. Bring to a gentle boil, then simmer for about 5 minutes until slightly thickened. Strain (if needed) and let it cool completely.

In two glasses, lightly press the mint leaves to release aroma (don’t over-crush). Add rum (or swap for sparkling apple cider for a mocktail), lime juice and 1 shot of tea syrup per glass. Fill each glass halfway with crushed ice and stir. Top up with more crushed ice, finish with fizzy water, and stir once more. Serve immediately.

2) Organic Vanilla Rooibos Apple Drink 

This is an easy, family-friendly tea drink that works both hot and chilled: vanilla rooibos adds a naturally sweet, creamy aroma, while apple juice brings a bright, juicy finish. Great for afternoons, weekend catch-ups, or a non-caffeinated evening option.

Ingredients

5-6 teaspoons Organic Vanilla Rooibos,  500 ml water, 500 ml apple juice.
Add lemon juice to taste. Garnish with fresh mint. Optional: cinnamon stick, a few slices of ginger, or extra mint for a fresh note.

Method

Hot version: Brew Vanilla Rooibos in 500 ml hot water for 5 minutes (cover while steeping). Strain, then stir in apple juice. Add lemon juice little by little until the sweetness tastes balanced. Serve warm, and add cinnamon/ginger if you’d like a spiced finish.

Cold version: Cold-brew the tea in 500 ml water in the fridge for 8 hours (or overnight), then strain and mix with apple juice. Pour over ice and garnish with mint. For an extra-refreshing twist, add a thin lemon slice or a small pinch of grated ginger.
